Ive been a long time lurker on this subreddit for a couple of years but I’ve been having enough trouble where I’d have to warrant a post.

I am struggling with getting a good, smooth extraction no matter what I try. Everytime I were to change how I were to extract it, the extraction is too fast and spurts everywhere

I have the current baratza encore esp and a breville bambino machine which I use a 54mm bottomless portafilter on as well as a morils tamper with a ripple base and a normcore coffee distributor. I am also using freshly roasted beans (12/29/25).

At first, I bought the wrong version of the baratza encore. I sold that and bought the esp version, however it still extracts too fast even at the lowest setting. I used to have a hand grinder but I felt it to be too cumbersome for my routine that I usually skip it if I didn’t grind it the night before.

I read some posts around here and people say to add washers to the baratza. I added literally all the washers to the grinder and still the espresso extracts too fast. I even added a rubber gasket to the baratza before I put on the plastic one so that the beans don’t go on the outside of the grinder and I replaced the felt on the bottom of the grinder.

I am wondering if it’s my technique, the grinder, my espresso machine OR all of the above which wouldn’t surprise me.

Anyone run into similar issues with this setup? All help and advice is appreciated, thanks!

EDIT: I am using 18g for dosing and using a puck screen. I also linked a gif in the comments of me extracting with a hand grinder using the same puck prep, dosage in, WDTing and tampering method and it comes out smoothly. I will contact Bartaza support and will provide an update.

And yes, this is on the lowest setting of the grinder. I am on setting one.

    If you are getting this fast a flow with the ESP set to “1” and all shims in place, then you may not have installed them correctly, or the grinder may be defective. Call Baratza for assistance.

    What does the ground coffee look like, compared to what ground coffee looks like when you grind it in your hand grinder on a fine setting?

    The gasket is on top of the upper burr carrier, not underneath snIas I’ve seen some people install it?

    Check for a damaged upper burr carrier.

    My baratza was out of adjustment and I had take the hopper off and reset it. Made a huge difference.

    **Update**: Sorry for the shitty gif, but this is how it would pull on a hand grinder. Same beans, tamper and distributor tool. Ofc I’ll need to dial this in further but thank you for helping me diagnose this issue!

    Ill be contacting baratza since I’ve tried reseating the hopper, and disassembling it and reassembling it

    I have this grinder and set to ~15 is already very fine. Can’t imagine what 0 looks like but it definitely is not what is coming out of your grinder. Try reinstalling tings in your grinder and try again with 14-15 grind

    If I’m going to pre-infuse, I’ll hold the double shot for 6 seconds, let go of the button, then push the double shot button after 35g has dispensed (the lag between button and shut off brings it to 36g). This might help?

    I recently discovered that my conical burr was coming loose and unseating from the two “pillars” that line up with the two holes on the bottom of the burr. Turns out it wasn’t fully tightened. (I have the ESP as well)

    Have you tried using less washer/shims? If you’re having to set to 0 and get that much flow, your grinder is going fine enough.

    I have an ESP. I had the opposite problem to most. I can’t go below grind setting 19 or it chokes the extraction.

    Additionally, you only need to hold the button down until you get flow, let go until you get the desired output then single press the button to stop extraction.
